- From the antibiotics front
- breeding can reduce the need for antibiotics, in fish;
- how (big, chain) restaurants in the US score on the use of antibiotics by their suppliers;
- Maryn McKenna’s book on Big Chicken is getting a lot of exposure, including this piece on government’s failure to act.
- Apple breeding — science, art and persistence.
- The true cost of food, as seen in two pieces earlier this year:
- Towards a New Narrative of Food from Resilience.org and
- Against Cheap Food: An Aide Memoir by Raj Patel.
- I couldn’t work out why there’s been such an outpouring of where-when-and-how-did-kale-come-to-dominate-our-lives stories. Maybe it’s because it’s 10 years since a landmark article. Amazingly, or not, it doesn’t mention the woman who claims to have created Big Kale. Or did she? (It’s a podcast, and it isn’t that easy to sample.)
- For the reference shelves:
- All you need to know about the science of slow cooking meat
- Gernot Katzer’s English Spice Index. Truly, astonishing.
